Wit Wolkering is a medium-soft white landrace wheat from South Africa, related to Sonora. Very light bran makes it a great whole-wheat flour for flatbreads and naturally leavened loaves. Dough doesn’t darken on standing. Popular among Central Coast farmers in the early 1900s because of its drought tolerance
